One last lemon loaf before summer is officially ov One last lemon loaf before summer is officially over? 🍋🍋🍋

This is undoubtedly one of my favorite recipes ever. It's originally by @tonirodriguezlv but I just have to share it with you!

It's usually a lot prettier than the version in my video, but I ran out of white flour so I had to mix with wholemeal spelt flour. It's was still absolutely delicious!

But now, the recipe:

🍋🍋🍋🍋🍋

Ingredients:
- 1 untreated lemon
- 200g sugar
- 270g all-purpose flour
- 20g corn starch
- 6g salt
- 3g baking soda
- 13g baking powder
- 27g almond flour
- 1.5g potato protein (optional)
- 195g water
- 130g sunflower oil
- 60g lemon juice

Instructions:
1. Peel the lemon zest using a peeler, removing the bitter white pith.
2. Grind the lemon zest with sugar in a food processor.
3. Add all-purpose flour, corn starch, salt, baking soda, baking powder, almond flour, and potato protein.
4. Mix for 10 seconds.
5. Pour in water, sunflower oil, and lemon juice.
6. Mix on medium for 2 minutes.
7. Divide the batter into two lined loaf pans (18 x 6 cm each). Make a lengthwise cut on top with a knife.
8. Bake at 180°C (fan) until a toothpick comes out clean.
9. Let the cakes cool at room temperature.

GLAZE AND DECORATION

Ingredients:
- 300g powdered sugar
- 60g lemon juice
- Cooled lemon cakes
- Candied lemon slices

Instructions:
1. Stir powdered sugar and lemon juice until smooth. Heat the mixture in the microwave to 45°C.
2. Remove the cooled cakes from the pans and place them on a wire rack.
3. Pour the warmed glaze over the cakes, letting it drip down.
4. Finally, decorate with candied lemon slices.
5. Allow the glaze to set at room temperature.

SERVING: Serve chilled or at room temperature.

STORAGE: Store at room temperature for 4-5 days, in the fridge wrapped in plastic for 6-7 days, or freeze in an airtight container or tightly wrapped in plastic wrap. Enjoy! 🍰🍋

Soaking up those last sunrays like a Greek cake so Soaking up those last sunrays like a Greek cake soaks up orange syrup. 🍊🌞🌾

To make a vegan Portokalopita (Greek orange cake) you dry phyllo sheets, make a batter of olive oil, plant based yoghurt, sugar, the juice and zest of a couple of oranges and a pinch of cinnamon, then crumble in the phyllo dough. As soon as it comes out of the oven you ladle on a fragrant orange syrup.

Tastes exactly like the end of summer. 🍊

I used to have so much anxiety about taking this step because it's the ONE decision in life that's truly irreversible. If only I knew back then I wouldn't miss my old life even a little bit.

This is Mitzi, she has ADHD but she won't find out This is Mitzi, she has ADHD but she won't find out until she is 33.

By then she'll be in and out of therapy for burnout, anxiety, depression, PTSD.

People will tell her she's lazy, disorganized, rude, because she can't pay attention for too long and keeps chatting during class, because she's always interrupting people because she'll forget what she wanted to say and it was important! Because she sometimes can't find her homework or even remember she had any and then her handwriting is impossible to read and her workbooks are full of scribbles.
At times she'll feel like a failure, like when she almost fails math class because she just can't get it into her head, or when she loses her driving license because a traumatic experience keeps her from making an appointment for her follow up tests, or when she quits uni after 2 semesters because even though she's interested in art history, she can't deal with the lack of structure and needs to do something with her hands.

But she's also told she's creative, funny, clever, spirited.
Because she can draw and paint for hours, she'll put on shows and performances, she can hyperfocus on things she's passionate about and won't stop until she knows everything and can tell the grown ups things, even they didn't know. She has an eye for details, she's incredible at solving problems and finding unique solutions, she'll try the hard level of a video game over and over again until she cracks it. She loves helping others and is incredibly compassionate and seems to be able to communicate with animals better than most.

Today, she's doing fine. She's learned to compensate for her symptoms and mostly hide the struggles that come with it but she's learning to be more open and allow herself to be vulnerable.

She has a wonderful support system and people who love her and a beautiful daughter who's already turning out to be a handful, just as she was.

It's all uphill from here ⛅
